Chex Scotcheroos

Makes 30 -32 large Scotcheroos
Serves: 12-15
  • 6 cups Chex cereal
  • 1 cup light corn syrup
  • 1 cup sugar
  • 1½ cups peanut butter
  • 2 cups semi sweet chocolate chips
  • 2 cups butterscotch chips
  • ½ cup peanut butter
  • 1 teaspoon vanilla
  1. Butter a large bowl and fill it with 6 cups of Chex cereal. Set aside.
  2. Line a baking sheet with wax paper.
  3. In a small saucepan, combine the corn syrup and sugar over medium heat.
  4. Once boiling, immediately remove from heat and stir in 1½ cups of peanut butter.
  5. Pour over cereal and fold together.
  6. Use a large cookie scoop to drop cereal onto wax paper and use your hands to press together.
  7. Using a microwave safe dish or a double boiler, melt together chocolate chips, butterscotch chips, ½ cup of peanut butter and vanilla.
  8. Place the chips on top of the peanut butter to prevent the chips from burning. If microwaving, heat for 30 seconds and stir.
  9. Continue to heat for 10 second intervals and stir until the chocolate mixture is smooth
  10. Once smooth, dip the bottoms of the scotcheroos into the chocolate mixture and place on wax paper.
  11. Add a dollop of the chocolate mixture to the top of each scotcheroo.
  12. Allow to cool completely at room temperature or chill in the refrigerator.
