Makes one 10 cup Coca Cola Bundt Cake

Ingredients
  • 1 cup Coca Cola (real thing, not diet)
  • ½ cup oil
  • 1 stick butter
  • 3 tablespoons cocoa powder
  • ½ teaspoon espresso powder (optional)
  • 2 cups granulated sugar
  • 2 cups all purpose flour
  • ½ teaspoon salt
  • 2 eggs
  • ½ cup buttermilk
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • Coca Cola Glaze
  • ½ cup butter
  • ⅓ cup coca cola
  • ¼ cup cocoa powder
  • ½ teaspoon espresso powder
  • Pinch of salt
  • 2 cups powdered sugar
  • ½ cup roasted pecans, chopped
Instructions
  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Spray bundt pan with baking spray or butter it and coat with flour.
  3. Combine the flour, sugar and salt in a mixer bowl.
  4. In a small pan, place Coca Cola, oil, butter, cocoa powder and espresso powder (if using) and bring to a boil. Pour the cola mixture into the flour mixture and mix well.
  5. In a measuring cup, combine buttermilk, eggs, baking soda and vanilla. Stir into the batter.
  6. Pour the batter into the prepared bundt pan.
  7. Bake for 40-45 minutes on the middle rack.
  8. When a toothpick inserted in the middle of the cake comes out clean, the bundt is ready.
  9. Let bundt cool in pan for at least 30 minutes (it's a bit on the fragile side).
  10. Glaze and garnish with chopped pecans.
Notes
Coca Cola Glaze. In a medium saucepan, heat butter, coca cola, cocoa powder, salt and espresso powder, if using. Bring to a boil, remove from heat and stir in powdered sugar and vanilla. Whisk vigorously until smooth and shiny. Glaze cooled bundt and garnish with chopped pecans.
